After a weekend spent grilling, I'm faced with a fridge full of leftovers. So this was dinner: Cold grilled chicken breast, sliced Cold grilled corn, cut off the cob A can of black beans, rinsed Chopped English cucumber Chopped tomato Cold grilled asparagus I mixed everything together and tossed the lot with a vinaigrette made of toasted ground cumin seeds, lemon juice, cilantro, olive oil and s/p. It marinated while I worked out - and then I munched down. Yummy, and plenty left for lunch tomorrow. Now those are leftovers I can deal with. This is the week I try to make myself give up morning carbohydrates again. I always do better during the day if I eat protein, but for years my body has fought me and cried out for carbs. So tonight I made fritatta with asparagus, grilled mushrooms, spring onions and dill. I tell myself that this will be so appealing in the morning that I won't want a bagel. We'll see. But the fritatta did look damned pretty when it was done. What is it about asparagus? They have those ornate, Louis XVI tips, but I always want to eat them with my fingers. Must be the trailer trash in me. Anyway, eat up, y'all.
